Whole Roast Peppered Butternut Squash

This recipe for whole roast peppered butternut squash has a great mix of tastes and textures. The savory spices bring out the natural sweetness of the butternut squash, making a delicious vegan dish thats great for any event.

Ingredients:

  • 1 medium butternut squash
  • 2 tablespoons olive oil
  • 1 teaspoon ground black pepper
  • 1 teaspoon sea salt
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder

Instructions:

Preheat the oven to 400F 200C

Cut the butternut squash in half lengthwise and remove the seeds

Mix olive oil, black pepper, sea salt, smoked paprika, and garlic powder in a small bowl

Brush the spice mixture evenly over the cut sides of the butternut squash

Place the squash halves cut side down on a baking sheet lined with parchment paper

Roast in the preheated oven for about 40-45 minutes, or until the squash is tender when pierced with a fork

Once done, remove from the oven and let it cool slightly before serving
