A flavorful and satisfying keto-friendly curry dish made with cauliflower and chickpeas cooked in a creamy coconut milk sauce infused with aromatic spices.
Ingredients:
- 1 small head cauliflower, chopped into florets
- 1 can 15 oz chickpeas, drained and rinsed
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can 14 oz coconut milk
- 2 tablespoons olive oil
- 2 tablespoons curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro, for garnish
Instructions:
In a large skillet, heat olive oil over medium heat
Add diced onion and minced garlic, saut until softened, about 2-3 minutes
Stir in curry powder, turmeric, cumin, and chili powder
Cook for another minute until fragrant
Add cauliflower florets and chickpeas to the skillet, stirring to coat with the spices
Pour in coconut milk and season with salt and pepper
Bring to a simmer
Reduce heat to low, cover, and let it simmer for 15-20 minutes, or until cauliflower is tender
Once cooked, taste and adjust seasoning if needed
Garnish with fresh cilantro before serving
