Ingredients:
- 4 boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1/2 teaspoon red pepper flakes
- 1 cup diced pineapple
- 1 cucumber, thinly sliced
- 2 tablespoons rice vinegar
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Instructions:
In a bowl, mix together soy sauce, honey, garlic, sesame oil, ginger, and red pepper flakes
Add chicken breasts to a ziplock bag and pour in marinade
Seal bag and marinate in the refrigerator for at least 30 minutes
Preheat grill or grill pan over medium-high heat
Remove chicken from marinade and discard excess marinade
Grill chicken for 6-7 minutes on each side or until cooked through, basting with marinade occasionally
In a separate bowl, combine diced pineapple, sliced cucumber, rice vinegar, and cilantro
Toss to coat
Season pineapple cucumber salad with salt and pepper to taste
Serve grilled chicken with pineapple cucumber salad on the side
Garnish with additional cilantro if desired
