Sticky Honey Soy Chicken with Pineapple Cucumber Salad

This recipe calls for grilled chicken that has been marinated in a tasty mix of honey, soy sauce, garlic, and spices. It goes well with a cool pineapple and cucumber salad that has been tossed in a sour rice vinegar dressing. It has just the right amount of sweet, savory, and sour flavors to make your taste buds happy.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • 1 cup diced pineapple
  • 1 cucumber, thinly sliced
  • 2 tablespoons rice vinegar
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions:

In a bowl, mix together soy sauce, honey, garlic, sesame oil, ginger, and red pepper flakes

Add chicken breasts to a ziplock bag and pour in marinade

Seal bag and marinate in the refrigerator for at least 30 minutes

Preheat grill or grill pan over medium-high heat

Remove chicken from marinade and discard excess marinade

Grill chicken for 6-7 minutes on each side or until cooked through, basting with marinade occasionally

In a separate bowl, combine diced pineapple, sliced cucumber, rice vinegar, and cilantro

Toss to coat

Season pineapple cucumber salad with salt and pepper to taste

Serve grilled chicken with pineapple cucumber salad on the side

Garnish with additional cilantro if desired
