This is a quick and tasty one-pot meal with tender chicken and fragrant rice that is perfect for any day of the week.
Ingredients:

- 5 lbs boneless, skinless chicken thighs
- 1 cup long-grain white rice
- 1 cup chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Season chicken thighs with thyme, paprika, salt, and pepper
Set Instant Pot to Saute mode and heat olive oil
Brown chicken thighs on both sides, then set aside
Add diced onions and minced garlic to the pot; saut until softened
Stir in rice, chicken broth, and place browned chicken on top
Close the Instant Pot lid, set to Pressure Cook for 10 minutes
Once done, let pressure release naturally for 5 minutes, then do a quick release
Fluff rice with a fork, and serve chicken over the bed of rice
