Ingredients:
- 1 cup dried green or brown lentils
- 2
- 5 cups vegetable broth or water
- 1 cup diced onion
- 1 cup diced bell peppers any color
- 1 cup diced zucchini
- 2 cloves garlic, minced
- 2 tsp olive oil
- 1 packet taco seasoning
- 1 cup diced tomatoes
- 1/2 cup corn kernels
- 8 small taco-sized tortillas
- Toppings: salsa, guacamole, shredded cheese, sour cream, and fresh cilantro
Instructions:
Run cold water over the lentils and drain them
Warm up the olive oil in a medium-sized saucepan over medium-low heat
Put in the garlic, onion, bell peppers, and zucchini
Cook the vegetables in butter until they are soft
Add the lentils, taco seasoning, and vegetable broth or water and mix them in
Bring to a boil, then lower the heat and let it simmer for 25 to 30 minutes, or until the lentils are soft and the liquid is gone
Add the corn and diced tomatoes and stir them in
Cook for another 5 minutes
You can warm tortillas up in the microwave or a dry pan
Put some of the lentil and vegetable mix into each tortilla, and then top them with whatever you like
