Ingredients:
- 2 cups grated carrots
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 1/4 cup almond milk
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts optional
- 1/2 cup raisins optional
- Vegan cream cheese frosting store-bought or homemade
Instructions:
Warm the oven up to 175F 350C
Set aside a 9-inch round cake pan or line it with parchment paper
Grease and flour it
Grate the carrots and mix them with the flour, sugar, vegetable oil, applesauce, almond milk, baking powder, baking soda, cinnamon, nutmeg, and salt in a large bowl
Mix everything together well
If you want to, mix in chopped walnuts and raisins
Put the batter into the cake pan that has been prepared and spread it out evenly
After the oven is hot, bake it for 30 to 35 minutes, or until a toothpick stuck in the middle comes out clean
Take the pan out of the oven and let the cake cool all the way down
Carefully take the cake out of the pan and place it on a serving plate once it has cooled
Vegan cream cheese frosting should be used to cover the cake
Cut and serve
