A tasty gluten-free casserole with soft chicken, bright asparagus, and gooey mozzarella cheese baked in a creamy sauce for a hearty meal.
Ingredients:
- 2 cups cooked chicken, shredded
- 1 pound fresh asparagus, trimmed and cut into 1-inch pieces
- 2 cups shredded mozzarella cheese
- 1 cup gluten-free chicken broth
- 1 cup gluten-free sour cream
- 1/2 cup gluten-free mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions:
Before you start cooking, heat the oven to 375F 190C
Prepare a 9x13-inch baking dish by greasing it
Shred the chicken, add the asparagus, and mix in the mozzarella cheese in a large bowl
Evenly spread in the baking dish that has been prepared
You can mix the chicken broth, sour cream, mayonnaise, Parmesan cheese, minced garlic, thyme, salt, and black pepper in a different bowl
Put this on top of the chicken and asparagus
After the oven is hot, bake for 25 to 30 minutes, or until the top is golden brown and bubbly
If you want, you can serve it hot and top it with fresh herbs
