Ingredients:
- 2 eggs
- 1 cup fresh spinach, chopped
- 2 slices smoked salmon
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 teaspoon red pepper flakes optional
Instructions:
Turn on your oven and heat it up to 375F 190C
Pour olive oil into a small dish that can go in the oven and spread it out evenly on the bottom
Add the chopped spinach to the dish
If you want, you can add salt, pepper, and red pepper flakes to taste
Combine well
On top of the spinach, put the slices of smoked salmon
Carefully crack two eggs over the salmon, making sure the yolks stay whole
Add Parmesan cheese that has been grated on top of the eggs and spinach
Put the pan in a hot oven and bake for 12 to 15 minutes, or until the egg whites are set but the yolks are still a little runny for a creamy texture
Take it out of the oven, let it cool a bit, and then serve it hot
If you want, you can add more Parmesan cheese and fresh herbs as a garnish
