Ingredients:
- 1 sheet of ready-rolled puff pastry
- 200g broccoli florets
- 100g soft goats cheese
- 2 eggs
- 150ml double cream
- Salt and pepper to taste
- Fresh thyme leaves for garnish
Instructions:
Preheat the oven to 200C 400F
Line a tart tin with the puff pastry sheet, trimming any excess
Prick the pastry base with a fork and blind bake for 10 minutes
In a pot of boiling water, blanch the broccoli for 2 minutes, then drain and refresh under cold water
In a bowl, whisk together the eggs, double cream, salt, and pepper
Spread the blanched broccoli over the pastry base, then crumble the goats cheese over the top
Pour the egg and cream mixture over the broccoli and cheese
Bake the tart in the preheated oven for 25-30 minutes, or until the filling is set and the pastry is golden brown
Garnish with fresh thyme leaves before serving
