Ingredients:
- 2 medium potatoes, grated
- 1 zucchini, grated
- 4 slices bacon, cooked and crumbled
- 1/4 cup all-purpose flour
- 2 eggs, beaten
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
In a large bowl, combine grated potatoes, grated zucchini, crumbled bacon, flour, beaten eggs, Parmesan cheese, garlic powder, salt, and pepper
Mix until well combined
In a skillet, heat olive oil over medium heat
Scoop about 1/4 cup of the potato mixture onto the skillet and flatten into a pancake shape
Cook for 3-4 minutes on each side, or until golden brown and crispy
Repeat with the remaining potato mixture, adding more oil to the skillet as needed
Serve the pancakes hot, optionally with sour cream or applesauce on the side
