A refreshing and colorful salad with black beans, corn, and a zesty lime dressing. Perfect for picnics, BBQs, or as a side dish for any meal.
Ingredients:
- 1 can 15 oz black beans, drained and rinsed
- 1 cup corn kernels fresh or frozen, thawed
- 1/2 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 avocado, diced optional
- Tortilla chips for serving optional
Instructions:
In a large bowl, combine black beans, corn, red bell pepper, red onion, and cilantro
In a separate small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper
Pour the dressing over the salad and toss to combine
If using, gently fold in the diced avocado
Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld
Serve the Black Bean and Corn Salad with tortilla chips on the side, if desired
